Summer Pepper & Fish Stew
- 2 garlic cloves, crushed
- 1 onion, halved and sliced
- 1 red pepper, sliced into strips
- 1 yellow pepper, sliced into strips
- 1 teaspoon olive oil
- 2 tablespoons small capers, rinsed
- 12 cup white wine
- 2 cups chicken broth
- 14 ounces tiny new potatoes, halved
- 10 ounces raw shrimp
- 14 ounces white fish fillets, cut into strips
- 1 tablespoon basil, shredded
- Fry the garlic, onion and peppers in a little oil until completely softened.
- Stir in the capers then add the wine, broth and potatoes and simmer until the potatoes are tender.
- Add the shrimp and fish and cook for 3 minutes.
- Stir through the basil and serve in bowls with crusty bread.
