Bean Stew With Corn Dumplings Recipe

  1. Preapare soup as directed in Not-So-Meaty Bean Soup recipe, EXCEPT don't blend the cooked mix.
  2. Instead, using a fork, slightly mash the cooked bean mix.
  3. Return the mix to boiling.
  4. Combine the ingredients for the dumplings in a medium bowl and mix with a fork till combined.
  5. Drop mix from a Tbsp.
  6. into 6 to 8 mounts atop bubbling stew.
  7. Reduce heat.
  8. Cover and simmer for 10 to 12 min or possibly till a toothpick inserted near the center of a dumpling comes out clean.
  9. Don't lift cover till dumplings have cooked for 10 min.
  10. Makes 6 to 8 servings.
