Bean Stew With Corn Dumplings Recipe
- 1 x Not so Meaty Bean Soup rec.
- 1/2 c. Flour, all purpose
- 1/2 c. Cornmeal, yellow
- 1 tsp Baking pwdr
- 1/2 tsp Salt
- 1/3 c. Soy, rice or possibly almond lowfat milk
- 2 Tbsp. Vegetable oil
- Preapare soup as directed in Not-So-Meaty Bean Soup recipe, EXCEPT don't blend the cooked mix.
- Instead, using a fork, slightly mash the cooked bean mix.
- Return the mix to boiling.
- Combine the ingredients for the dumplings in a medium bowl and mix with a fork till combined.
- Drop mix from a Tbsp.
- into 6 to 8 mounts atop bubbling stew.
- Reduce heat.
- Cover and simmer for 10 to 12 min or possibly till a toothpick inserted near the center of a dumpling comes out clean.
- Don't lift cover till dumplings have cooked for 10 min.
- Makes 6 to 8 servings.
