Leftover Potato Cakes
- Leftover mashed potatoes
- 1 egg, beaten
- Parsley, chopped
- Celery, chopped
- Celery seed
- 1/4 cup chopped sauteed onions
- raw onion, grated
- 1 dash grated nutmeg
- Flour, breadcrumbs,
- crushed cornflakes
- Butter
- Fat
- Mix all ingredients through and including nutmeg.
- Shape mixture into little cakes.
- Dip the cakes in the flour, crumbs or flakes.
- Melt butter in a skillet.
- Brown the cakes in the butter on one side, reverse them and brown the other side.
