Crystallized Ginger - Crystallized Ginger

  1. Shave/slice ginger 1/16 inch thick.
  2. Place in 2 cups (475 ml) of boiling water with 1/4 cup (60 ml) of sugar.
  3. Boil 10 min.
  4. Strain.
  5. Place boiled ginger slices in fresh 2 cups (475 ml) of water with 1/4 cup (60 ml) of sugar and food color.
  6. Boil 10 min.
  7. Strain.
  8. This may be repeated 2 more times for a mild product or proceed for regular.
  9. Place boiled ginger on paper towels to dry.
  10. Sprinkle heavily with sugar on both sides.
  11. Allow to air dry for 24 hours to crystallize.
