Chicken In Mustard Sauce
- 4 boneless, skinless chicken breasts
- 4 Tbsp. mayonnaise
- 1 Tbsp. Grey Poupon mustard
- 4 cloves garlic
- 1/2 stick margarine
- 2 zucchini squash, sliced
- 2 yellow squash, sliced
- 1/2 tsp. basil
- 1 Tbsp. chives
- 1/2 Vidalia onion, sliced
- 1/3 c. white wine (optional)
- Italian Blend cheese
- Lightly salt and pepper chicken.
- Brown in margarine until golden.
- Mix sauce ingredients, mayonnaise and Grey Poupon; add zucchini, squash, onion, and garlic to sauce.
- Place chicken and pan drippings in the bottom of a casserole.
- Pour sauce/vegetable mixture on top of chicken and bake at 350u0b0 for 30 minutes.
- Remove from oven and sprinkle cheese on top and return to oven for approximately 2 minutes or until cheese melts.
- Enjoy.
