Cajun Skillet Rice
- 1 Tablespoon Olive Or Vegetable Oil
- 13 cups Onion, Chopped
- 13 cups Green Pepper, Chopped
- 13 cups Sweet Red Pepper, Chopped
- 1 pound Kielbasa, Sliced
- 2 teaspoons Cajun Seasoning Blend (I Used Penzey's)
- 18 teaspoons Cayenne Pepper (Optional)
- 1 can (14.5 Oz. Can) Diced Tomatoes With Liquid (Muir Glen Fire Roasted Is What I Used)
- 1- 1/2 cup Chicken Broth
- 3/4 cups Long Grain Rice
- In a large skillet over medium high heat, heat oil and add vegetables and kielbasa.
- Sprinkle Cajun seasoning and cayenne over the vegetables.
- Saute until onion is translucent, peppers have softened, and kielbasa is lightly browned.
- Add remaining ingredients, bring to a fast simmer, and cover.
- Cook for 20 minutes or until all liquid is absorbed.
