Ray's Mini Empanada Poppers

  1. preheat oven to 425 & parchment line a baking sheet.
  2. Roll out pie crust with a little flour.
  3. I use a small round cookie cutter.
  4. but you can use what you have.
  5. cut circles add a small amount of filling close over and pinch edges with fork.
  6. a sprayed a little cooking spray on top and sprinkled with cinnamon & sugar.
  7. bake 12-15 minutes
  8. powder sugar to garnish if desired
  9. **these were made quick & easy with left over pie filling** you can always make pumpkin filling, and or any other filling of choice
