Ray's Mini Empanada Poppers
- 1 box pie crust
- 1 can pie fill in of choice
- 1 cinnamon/sugar mix
- 1 cooking spray
- 1 powder sugar optional
- preheat oven to 425 & parchment line a baking sheet.
- Roll out pie crust with a little flour.
- I use a small round cookie cutter.
- but you can use what you have.
- cut circles add a small amount of filling close over and pinch edges with fork.
- a sprayed a little cooking spray on top and sprinkled with cinnamon & sugar.
- bake 12-15 minutes
- powder sugar to garnish if desired
- **these were made quick & easy with left over pie filling** you can always make pumpkin filling, and or any other filling of choice
