Tricolor Potato Balls For Cherry Blossom Viewing

  1. Grind the dried shrimp with a mortar and pestle to a fine powder.
  2. Bring the cream cheese to room temperature.
  3. Peel the potatoes and cut into quarters.
  4. Cover them with plastic wrap and cook them in the microwave.
  5. Mash while still hot.
  6. Combine the cheese and katakuriko and knead well into the mashed potatoes.
  7. Season generously with salt and pepper.
  8. Divide the mixture into 3 portions.
  9. Mix in aonori seaweed powder to one, and the dried shrimp to another.
  10. Add the white sesame seeds to the plain white mixture and make it into 6 balls.
  11. Form the other two colored mixtures into balls as well.
  12. Put a generous amount of oil in a frying pan and cook the balls over low heat, rolling them around.
  13. When all of the balls are cooked, microwave them for 1 minute.
  14. This will help make them chewy.
  15. Thread 3 balls on each skewer, and they're ready to serve.
