Vegetarian Soy-Milk-Based Cheese

  1. To prepare the shiratamako, put it in a plastic bag, then press down on top with a spatula to crush the lumps.
  2. This will make it harder for lumps to form.
  3. Put all of the ingredients into a bowl (except for the salt, pepper, and miso/sake lees), then mix evenly.
  4. Simmer over low heat, stirring from time to time to prevent scalding, until it thickens.
  5. Add salt and pepper and miso to taste, then it's ready to be served.
  6. To give it a consistency like melting cheese, finely chop up 1 piece of pre-cut mochi, then simmer your mixture while stirring until the mochi melts.
  7. It will look just like cheese.
