Vegetarian Soy-Milk-Based Cheese
- 100 grams Shiratamako
- 400 ml Soy milk
- 2 tbsp Vinegar
- 3 tbsp Olive oil
- 1 dash Salt and pepper
- 1 tsp Miso (to give it a fermented flavor)
- 1 tbsp Or sake lees (to give it a fermented flavor)
- To prepare the shiratamako, put it in a plastic bag, then press down on top with a spatula to crush the lumps.
- This will make it harder for lumps to form.
- Put all of the ingredients into a bowl (except for the salt, pepper, and miso/sake lees), then mix evenly.
- Simmer over low heat, stirring from time to time to prevent scalding, until it thickens.
- Add salt and pepper and miso to taste, then it's ready to be served.
- To give it a consistency like melting cheese, finely chop up 1 piece of pre-cut mochi, then simmer your mixture while stirring until the mochi melts.
- It will look just like cheese.
