Dad's Summertime Vegetable Salad

  1. *may add more for lighter consistency.
  2. * can use plain yogurt but taste will be different.
  3. Combine everything but parsley, gently, in large bowl.
  4. Chill 1/2 hours.
  5. Serve with topping of parsley.

cottage cheese, lowfat sour cream, cucumbers, green onions, beefsteak tomatoes, red pepper, yellow pepper, orange bell pepper, red radishes, carrot, black olives, frozen peas, red onion, garlic, salt, fresh ground pepper, fresh parsley
