Mary'S Fruit Cake
- 2 c. Crisco
- 2 c. sugar
- 3 c. flour
- 12 eggs, separated
- 1/2 c. orange juice
- 1/2 c. maple syrup
- 1 tsp. soda
- 1 Tbsp. hot coffee
- 1 Tbsp. cinnamon
- 1 Tbsp. cloves
- 1 Tbsp. allspice
- 1 Tbsp. nutmeg
- 1 Tbsp. salt
- 1 tsp. mace
- 1 lb. dates
- 1 lb. figs
- 1 lb. pecans
- 2 lb. candied fruit mix
- 2 lb. raisins
- 1 lb. currants
- 1 c. flour (for dredging)
- Cream Crisco and sugar.
- Add egg yolks, one at a time, and beat well.
- Add liquids alternately with dry ingredients (except 1 cup flour).
- Add stiffly beaten egg whites.
- Fold in fruits and nuts that have been dredged in one cup flour.
- Steam 3 hours and dry out in slow oven for 1 hour.
