Black Bean Gazpacho
- 3 cups tomatoes chopped, peeled, and seeded
- 1 1/2 cups vegetable juice cocktail hot style
- 1 cup ham cubed, fully cooked
- 15 ounces black beans can or garbanzo beans, rinsed, drained
- 1/2 cup cucumbers yellow summer squash, and or zucchini, chopped, seeded
- 1/2 cup green bell peppers or yellow, chopped
- 1/4 cup scallions, spring or green onions thinly sliced
- 2 tablespoons salad dressing, italian
- 1 x red hot pepper sauce optional
- In a large mixing bowl combine tomatoes, juice, ham, beans, cucumber or squash, chopped pepper, green onion, and dressing.
- Cover and chill for 2 to 24 hours.
- If desired, serve with bottled hot pepper sauce.
- Makes 4 main-dish servings.
