Orange Peel & Chocolate Chip Brioche

  1. Make the bread dough in the bread maker.
  2. Finely chop the orange peel.
  3. When the bread dough is finished, lightly punch down.
  4. Let sit for 20 minutes.
  5. The photo shows the dough after letting it sit.
  6. Roll out the dough into a rectangular shape and scatter with the chocolate chips and orange peel.
  7. Roll up the dough.
  8. Tightly pinch closed the seam.
  9. Cut into 8~9 sections in sizes that match the muffin pan size.
  10. Grease the muffin pan or line with silicone cups.
  11. Put in the bread dough.
  12. Let rise a second time until double in size.
  13. After rising, coat the tops with the egg whites leftover from making the dough.
  14. Top with almond slices and orange peel and then spray with water.
  15. Bake in a 200C oven for 15 minutes.
  16. Remove from the pan, and they're complete.
  17. Since I baked them in silicone cups, they can be given as gifts.
  18. The beautiful yellow dough is crisp, fluffy, and delicious.
