Curried Shrimp With Marmalade Soy Dip
- 2 lbs shrimp
- 1 egg, beaten
- 1 tablespoon water
- 1 cup breadcrumbs, toasted
- 2 teaspoons curry powder
- 12 teaspoon salt
- 18 teaspoon pepper
- 14 cup oil
- marmalade, soy dip
- 13 orange marmalade
- 14 cup lemon juice
- 14 cup soy sauce
- 1 garlic clove, minced
- 1 dash ginger
- 1 teaspoon cornstarch
- peel and devein shrimp.
- rinse in cold water.
- combine egg and water in a bowl.
- combine dry ingredients in another bowl.
- dip shrimp in egg then in dry ingredients.
- place on a well greased cookie sheet.
- drizzle oil over shrimp.
- bake 500 degrees for 10-15 minutes or until brown.
- serve with marmalade dip.
- to make dip: combine ingredients and mix well.
- cook stiring constantly.
- until clear and thickened.
- serve hot.
