Southwestern Spinach Dip
- 1 box (10 Oz. Box) Frozen Chopped Spinach
- 2 packages (8 Oz. Package) Cream Cheese
- 1 Tablespoon Cilantro, Chopped
- 1 whole Onion, Medium, Chopped
- 1 can (10 Oz. Can) Rotel (Chopped Tomatoes And Green Chiles)
- 2 cups Monterey Jack Cheese, Grated, Divided
- 1 Tablespoon Red Pepper Flakes (optional)
- Thaw chopped spinach and discard excess water.
- In a large mixing bowl, combine cream cheese, cilantro, chopped onion, Rotel, spinach and half of the Monterey Jack cheese.
- Mix until creamy.
- Place in a 9-inch greased deep dish pie plate.
- Top with remaining cheese on top and sprinkle with red pepper flakes, if using.
- Bake at 400 degrees for 30 minutes or until top is golden brown.
- Serve with tortilla chips, bread slices or crackers.
