Southwestern Spinach Dip

  1. Thaw chopped spinach and discard excess water.
  2. In a large mixing bowl, combine cream cheese, cilantro, chopped onion, Rotel, spinach and half of the Monterey Jack cheese.
  3. Mix until creamy.
  4. Place in a 9-inch greased deep dish pie plate.
  5. Top with remaining cheese on top and sprinkle with red pepper flakes, if using.
  6. Bake at 400 degrees for 30 minutes or until top is golden brown.
  7. Serve with tortilla chips, bread slices or crackers.
