Apple Chicken Quesadillas
- 2 whole Medium Tart Apples, Sliced And Cut Into Pieces
- 1 cup Diced, Cooked Chicken Breast
- 1/2 cups Fresh Or Frozen Corn, Thawed
- 1/2 cups Shredded Cheddar
- 1/2 cups Shredded Mozzarella
- 1 whole Fresh Tomato, Chopped
- 1/2 whole Onion, Chopped
- 1/4 teaspoons Salt
- 8 whole 8 Inch Flour Tortillas
- Combine all ingredients except tortillas in a large bowl.
- For each quesadilla, place approximately 3/4 cup of the filling inside a tortilla; fold in half and secure with a toothpick.
- Place on a greased baking sheet.
- Bake at 400 degrees F for 8-10 minutes, or until golden brown.
- Turn over and bake 5-8 minutes longer.
- Makes 8.
