Classic French Potato Salad

  1. Cook potatoes until tender, drain and rinse under cold water.
  2. Quarter and dice.
  3. Combine remaining ingredients.
  4. Toss with diced potatoes.
  5. Cover and refrigerate 1 hour before serving.
