Turkey Meatball Soup Recipe

  1. In small skillet heat butter and saute/fry onions over low heat till golden brown.
  2. In a large bowl combine onions with turkey, bread crumbs, egg and parsley, Worcestershire sauce, salt and pepper.
  3. Mix well with hands till completely combined, set aside.
  4. In large saucepan, bring broth and water to a boil, add in celery and carrots, reduce to simmer, cover and cook vegetables 10 min.
  5. Meanwhile, shape turkey mix into small (one inch) meatballs.
  6. Moisten hands slightly with water - makes it easier.
  7. Add in meatballs to simmering broth, continue cooking, covered for 15 min.
  8. Cook noodles according to package directions, drain and add in to soup.
  9. Cook 5 min longer.
  10. Let soup set a few min before serving.
