Mediterranean Vegetable Pie

  1. Heat oven to 350.
  2. Spray pie plate w/cooking spray.
  3. Place potato slices evenly on bottom of plate, with some on the sides.
  4. Bake 12-15 min, remove & set aside.
  5. Saute onion until tender then add spinach and let wilt(2-3min).
  6. Remove from heat and stir in olives then spread mixture over the potatoes.
  7. In a seperate bowl, combine ricotta, feta & basil.
  8. Spoon over spinach in pie plate.
  9. Slice tomatoes and spread evenly over pie plate.
  10. Bake 20-25min.
  11. Sprinkle Mozzeralla & Parmesean and bake another 5 minute.
