Crispy Potato Chip Fish Recipe
- 1 (1 lb.) pkg. frzn cod or possibly haddock fillets, use 3/4 pound to serve 2 people
- 1/2 c. evaporated lowfat milk
- 1 teaspoon lime juice
- 1/2 teaspoon salt
- 1 c. crushed potato chips, Ruffles
- 1 egg
- 1-2 tbsp. butter
- Allow frzn fish to stand at room temperature 15 min.
- Cut fish into 3-4 equal portions.
- Combine lowfat milk, egg, lime juice, and salt.
- Dip fish in lowfat milk mix; roll in crushed potato chips to coat.
- Place on greased shallow pan; dot with butter and sprinkle top with paprika.
- Bake in 400 degree oven till fish flakes, about 25-30 min.
- If using fresh cod, don't bake quite as long.
