Homemade Ponzu Sauce

  1. Combine the soy sauce, vinegar, and mirin in a pot and heat.
  2. Don't let it boil much.
  3. Remove from the heat once it starts to bubble.
  4. Let cool.
  5. Once cooled, add your favorite citrus juice.
  6. If using mirin seasoning, you can just mix it.
  7. If you use hon-mirin, but don't mind the alcohol, you don't need to heat it.
  8. It's done!
  9. Store in a container.
  10. I used it on some bonito!
