Apple Mint Triangles

  1. Preheat oven to 220 degrees celcius.
  2. Line 2 baking trays with baking paper.
  3. Combine apple, caster sugar and mint.
  4. Cut each pastry sheet into 4.
  5. Divide apple mixture amongst pastry.
  6. Brush edges of pastry with a little water.
  7. Fold over pastry to form triangles.
  8. Use fingers to pinch edges to seal.
  9. Place triangles on trays and brush each with egg and sprinkle over the sugar.
  10. Bake 15 - 18 minutes.
  11. Serve warm with custard or ice cream.
