Slightly Cheesy Mac and Meat
- 2 cups Whole Wheat Elbow Macaroni
- 14 ounces, weight Lean Minced Beef
- 1 whole White Onion, Big, Minced
- 5 ounces, weight Grated Cheese
- 2 whole Eggs
- 1- 1/2 cup Low-fat Cooking Cream
- 1- 1/2 cup Low-sodium Stock (any You Have)
- 1/2 teaspoons Crushed Black Pepper
- Cook the macaroni a few minutes short of package instructions, rinse and place in a large bowl.
- Brown the minced beef, and once browned, drain the grease and place the meat into the bowl with maraconi.
- In the same pan you used for the minced beef, saute the onion until translucent, place in bowl with macaroni and beef, mix well.
- Add the grated cheese and mix well.
- You can use any cheese you like, I try to find low-sodium ones, but any will do if youre not watching your sodium intake.
- In a separate bowl, mix the eggs, cream, stock and pepper, then pour into other ingredients and mix well.
- You can alter the spices, curry powder works great.
- Grease an 8 by 10 oven dish and pour the mixture in and cook in a 400F oven for 30 minutes or until bubbly and slightly brown on top.
- You can certainly add more cheese (and calories!)
- and use salt to taste.
- My guilty pleasure is to have this with ketchup...or pickled beets or cukes.
- Serves 4 very generous portions.
