Hoppin Johns
- 1 tablespoon oil
- 1 large ham hock
- 1 lb smoked sausage
- 1 cup onion, chopped
- 12 cup celery, chopped
- 12 cup red pepper, chopped
- 1 tablespoon chopped garlic
- 1 lb black-eyed peas, soaked overnight and rinsed
- 1 quart chicken stock
- 1 bay leaf
- 1 teaspoon dry thyme leaves
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons finely chopped green onions
- 3 cups steamed white rice
- Heat oil in large soup pot.
- add ham hock and sear on all sides, for about 4 minutes.
- Add onion, celery, red pepper, and garlic, cook for 4 minutes.
- add black eyed peas, chicken stock, bay leaves, thyme and salt and pepper.
- Bring to a boil, reduce heat and simmer for 40 mins, or until the peas are creamy and tender, stirring occasionally, adding water and or stock as needed.
- Stir bean mixture into cooked white rice and adjust seasonings to taste.
- garnish with green onion.
