Filet with Serrano Peanut Sauce

  1. For the steak: Whisk together steak marinade (all ingredients other than the steak).
  2. Marinate filets in marinade in a Ziploc bag for 2 hours or overnight.
  3. For the peanut sauce: Combine all ingredients in a blender and blend together until smooth.
  4. If too thick, add more hot water.
  5. Taste to see if any adjustments need to be made.
  6. Bring steak to room temperature, and preheat grill.
  7. Grill steak for about 5 minutes on each side (depending on size), or until desired doneness, basting with marinade while cooking.
  8. Let rest for 5 minutes.
  9. For medium rare, cook to 130 degrees F and let rest until 135 degrees F.
  10. Serve steak with Serrano peanut dipping sauce.
