Roasted Leg of Lamb

  1. Inset garlic slivers into lamb.
  2. Rub with oil, then herb mixture.
  3. Cover with foil and refrigerate 2-3 hours to allow flavors to penetrate the meat.
  4. Roast in a preheated 400F oven 30-45 minutes depending on weight.
  5. Serve with Gratin Dauphinois and Tomato Provencale.
