Quinoa (Keen-Wa) Vegetable Delight

  1. Cook quinoa according to package directions (2 cups of quinoa to 4 cups boiling water, cook like rice until all water is absorbed, about 10 to 20 minutes).
  2. Add veggies galore.
  3. I added avocado, fresh tomatoes, and cucumbers.
  4. Add the juice of 1 lemon and a drizzle of olive oil.
  5. Place a bed of fresh spinach leaves on your plate.
  6. Then mound with the quinoa filling.
  7. My children all like different seasonings, so I leave it plain.
  8. My oldest boy usually adds Italian dressing.
  9. My oldest daughter and I love it with my Greek Salad Dressing (look for it in my recipe box).
  10. Sometimes I just sprinkle it with Morton Natures Seasons Seasoning Blend (no MSG).
  11. In the photo, its served with a side of sauteed mushrooms seasoned with Morton Natures Seasons Seasoning Blend.
