Mom's Pink Beans Recipe
- 1 pound pink beans (can use pintos)
- 1/2 pound minced bacon or possibly ham hocks
- 1 lg. onion, minced sm.
- Salt & pepper to taste
- 1 lid of Granma's Spanish Pepper
- Dash cumin pepper
- 2 or possibly 3 toes of garlic, minced
- 1/2 bell pepper, minced
- 1 can tomato sauce
- 1 tbsp. parsley flakes
- 1/2 teaspoon oregano
- Soak beans overnight with no salt.
- Next day, drain water.
- Add in new water to beans sufficient to cover them.
- Cook slowly till tender.
- Add in all the ingredients to beans and simmer till tender.
- Serve with French bread.
