Pesto Chicken Sandwiches

  1. Place the chicken breasts between two sheets of waxed paper.
  2. Use a meat pounder to pound the breasts to an even thickness of about 1/2 inch.
  3. Cut each breast in half so that you have 4 pieces (to better fit the buns).
  4. Season chicken with salt and pepper.
  5. Heat olive oil in a large nonstick skillet on medium heat.
  6. Add chicken to the skillet for about 4 minutes on each sides till brown and cooked through.
  7. Once chicken is just about cooked, place 1/4 cup of pesto on each piece of chicken and a slice of cheese on top.
  8. Cover the pan with a lid until the cheese melts.
  9. Transfer chicken breasts to toasted buns and add lettuce and tomato.
  10. Enjoy!
