Pesto Chicken Sandwiches
- 2 whole Large Chicken Breasts
- 1 cup Basil Pesto
- 4 slices Muenster Cheese (or Mozzarella)
- 4 whole Sandwich Size Buns
- Sliced Tomatoes
- Lettuce Leaves
- 2 Tablespoons Olive Oil
- Place the chicken breasts between two sheets of waxed paper.
- Use a meat pounder to pound the breasts to an even thickness of about 1/2 inch.
- Cut each breast in half so that you have 4 pieces (to better fit the buns).
- Season chicken with salt and pepper.
- Heat olive oil in a large nonstick skillet on medium heat.
- Add chicken to the skillet for about 4 minutes on each sides till brown and cooked through.
- Once chicken is just about cooked, place 1/4 cup of pesto on each piece of chicken and a slice of cheese on top.
- Cover the pan with a lid until the cheese melts.
- Transfer chicken breasts to toasted buns and add lettuce and tomato.
- Enjoy!
