Pecan nut and carrot jumbo muffins

• 2 cup self raising flour
• 1/2 tsp bicarb soda
• 1/2 cup brown sugar
• 1/2 cup chopped pecan nuts
• 1 cup grated carrot
• 1 tbsp ground cinnamon
• 1/2 tbsp ground nutmeg
• 1 cup milk
• 2 each eggs
• 2 tbsp oil

1. Pre heat oven to 200 C. Spray muffin tray with cooking spray.
2. I used a jumbo muffin tray so only made 6 out of this batch.
3. Add all ingredients together and mix well
4. Pour into trays.
5. I sprinked brown sugar and chopped pecan nuts on top.
6. Put into oven and bake for 20 - 30 minutes or until a skewer comes out clean when testing
