Pecan nut and carrot jumbo muffins
- 2 cup self raising flour
- 1/2 tsp bicarb soda
- 1/2 cup brown sugar
- 1/2 cup chopped pecan nuts
- 1 cup grated carrot
- 1 tbsp ground cinnamon
- 1/2 tbsp ground nutmeg
- 1 cup milk
- 2 each eggs
- 2 tbsp oil
- Pre heat oven to 200 C. Spray muffin tray with cooking spray.
- I used a jumbo muffin tray so only made 6 out of this batch.
- Add all ingredients together and mix well
- Pour into trays.
- I sprinked brown sugar and chopped pecan nuts on top.
- Put into oven and bake for 20 - 30 minutes or until a skewer comes out clean when testing
