Heather'S Reuben Casserole
- 3 c. cubed rye bread
- 1 c. water
- 3 eggs
- 1 lb. corned beef, sliced and chopped
- 1 tsp. caraway seed
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 8 oz. shredded Swiss cheese
- 16 oz. sauerkraut, well drained
- 1 c. Thousand Island or Russian dressing
- In a large bowl, mix together bread, water, eggs, corned beef, caraway seed, salt and pepper.
- Place half of the mixture in a large shallow casserole dish that has been sprayed with nonstick spray coating.
- Spread evenly over bottom. Spread sauerkraut over mixture.
- Spread dressing over the sauerkraut.
- Spread with remaining corned beef mixture and sprinkle with Swiss cheese. Bake at 350u0b0 for 35 to 45 minutes or until golden brown and set. Serves 6 to 8.
