Cheesy Ham and Potato Soup

  1. Peel potatoes and cut into 1 inch cubes.
  2. Bring water to a boil in a large pot.
  3. Add potatoes and cook until tender.
  4. Meanwhile; Peel and finely chop onion.
  5. Melt butter in pan over med.
  6. heat, add onion; cook, stirring frequently until onion is translucent and tender, but not brown.
  7. Add flour to onions; season with pepper flakes and black pepper to taste.
  8. Cook 3 to 4 minutes.
  9. Add everything together, stir, simmer 30 minutes, stir often.
