Pickled Red Onions

  1. Combine hot water, vinegar, sugar and salt in a glass bowl.
  2. Stir until sugar and salt dissolve.
  3. Add onions, Serrano and red peppers.
  4. Stir to blend.
  5. Cover and chill overnight.
  6. Will keep for up to a week.
  7. Use slotted spoon to transfer to plate and serve.
