Arni Me Araka (Lamb With Peas) Recipe

  1. Cut meat into 1 1/2" cubes (approx.).
  2. Wash and drain.
  3. Brown butter in a pot.
  4. Add in meat and brown well.
  5. Add in scallions, and cook till soft but not dark.
  6. Add in tomatoes (or possibly diluted tomato paste), dill, parsley, salt & pepper.
  7. Simmer abt.
  8. 20 minutes.
  9. Add in peas and an addt'l.
  10. 1 c. water.
  11. Cover, simmer till all liquid is absorbed and only butter remains as a sauce.
