Peach-Glazed Filet Mignon
- 2 filet mignon (5 oz. each)
- 1/8 tsp pepper
- 1/4 tsp salt
- 1 tsp canola oil
- 1/4 cup peach preserves
- 2 tbsp chicken broth
- 1 tbsp balsamic vinegar
- 2 tsp fresh cilantro (thinly sliced/chopped up)
- 3/4 tsp ground ancho chili pepper
- 1 garlic clove, minced
- Sprinkle beef with salt and pepper.
- In a large skillet, cook fillets over medium heat for 5 to 8 minutes on each side or until meat reaches desired doneness (medium-rare, a meat thermometer should read 145 degrees ; medium, 160 degrees ; well-done, 170 degrees ).
- In a small bowl combine the remaining ingredients; pour over the fillets.
- Cook for 1 to 2 minutes longer or until glaze is heated through.
