Carrot chili
- 1 lb pork chop boneless
- 1 lb ground sirloin
- 2 tbsp olive oil, extra virgin
- 1 cup multicolored sweet peppers
- 1 small onion diced
- 14 1/2 oz diced tomatoes
- 28 oz tomato sauce
- 1/4 cup tomato paste
- 1 3/4 cup diced carrots
- 1/4 cup ground cumin
- 1/2 tsp ground black pepper
- 1 tbsp granulated garlic powder
- 1/4 cup chopped parsley
- 1/4 cup cilantro, chopped
- 1 tsp salt
- 1/2 tbsp Hersheys special dark chocolate cocoa powder
- 1/2 tsp cayenne pepper
- 1/2 tsp turmeric
- 1 chopped cilantro
- 1 cup extra sharp cheddar cheese, shredded
- Dice the carrots, multicolored peppers, and onion.
- Heat oil In a pot add carrots, peppers and onion.
- Saute in pot for 4 minutes.
- Add ground sirloin and pork.
- Incorporate well and when browned add tomatoes and spices.
- Stir in well.
- Simmer 8 minutes add tomato sauce and tomato paste.
- Simmer on low heat for 30 minutes stirring occasionally.
- Put into bowls add cheese and cilantro on top.
