Saute' Eggplant with Sofrito Recipe lillyy

  1. Chop eggplant, red pepper into small pieces and mushrooms.
  2. They do not have to be uniform.
  3. Can be cubed or sliced.
  4. In large non stick skillet add olive oil garlic, salt and eggplant.
  5. Saute the eggplant to a soft consistency.
  6. Add Sofrito Verde, red pepper and mushrooms.
  7. Saute everything together so the peper and mushrooms are al dente
