Grilled Eggplant Parmesan

  1. Coat eggplant slices with dressing.
  2. Arrange eggplant slices in a single layer on a cookie sheet or place on greased grill over medium coals.
  3. Broil or grill for 8 minutes on each side or until lightly browned.
  4. Place 1 layer of eggplant slices in a 9x5-inch baking dish.
  5. Top with tomato slices.
  6. Evenly top with cheese and marinara sauce.
  7. Bake at 350 Degree F for 30 minutes until heated through.
  8. Serve immediately.
