Warm Pea Soup

  1. Add potato in a saucepan and cover with water.
  2. Bring to a boil.
  3. Reduce the heat to a simmer and cook until the potato is tender, about 10 minutes.
  4. Remove the potato.
  5. In a pot filled with 6 cups water, add the green onions; bring to a boil.
  6. Add the peas and turn off the heat immediately.
  7. Allow the pea mixture to rest for 5 minutes.
  8. Drain the peas and green onions and puree in a blender with the potato, salt, pepper, and 2 cups water until very smooth, about 3 minutes.
  9. Warm the soup over a low flame in a medium pot, stirring frequently, until warm, about 5 minutes.
  10. Garnish with the sour cream and serve.
