Roasted Wild Duck

  1. rub ducks inside and out with seasoned salt and seasoned pepper
  2. in a large sauce pan melt the butter and 1/2 cup of water
  3. add ground sage and 1/4 cup chopped onion
  4. mix with croutons and blend well
  5. stuff ducks loosely with crouton mixture.
  6. line bottom of roasting pan with sliced onions.
  7. place ducks breast up and cover each one with 2 strips of bacon.
  8. add 1/2 cup water and half cup of wine to bottom of roasting pan
  9. cover and bake at 300for 2 hours or until tender.
