Applesauce Doughnuts
- vegetable oil
- 1 c. whole wheat flour
- 1 1/4 c. unbleached white flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg
- 1/4 c. honey
- 1/4 c. packed light brown sugar
- 2 eggs
- 2 Tbsp. vegetable oil
- 1/4 c. apple cider, apple juice or milk
- 1 c. unsweetened applesauce
- 1/2 tsp. vanilla
- Fill heavy saucepan 2/3 full with vegetable oil; heat to 360u0b0 on deep fat frying thermometer.
- Sift flour, baking powder, soda and spices together; set aside.
- Combine honey, brown sugar and eggs.
- Add 2 tablespoons oil, beating thoroughly.
- Alternately add dry ingredients and cider, mixing well.
- Stir in applesauce and vanilla.
- Carefully drop batter by level tablespoons, 3 or 4 at a time, into hot oil; do not overcrowd.
- Fry, turning once, for 3 to 4 minutes or until golden brown.
- Remove with tongs and drain on paper towel.
- Makes 3 to 4 dozen.
