Sriracha-Bacon Meatloaf
- 2 lb ground beef
- 1 packages bacon
- 1/2 cup sriracha
- 1/3 cup sambal olek (sriracha style chili paste)
- 1 egg
- 1 cup breadcrumbs
- 3/4 oz basil; chiffonade
- 1 tbsp ground coriander seed
- 2 packages dried onion soup mix
- 6 clove garlic; minced
- 6 roasted red bell peppers; medium dice
- 1 fennel bulb; minced
- 4 stalks celery; small dice
- 6 stalks asparagus; small dice
- 2 bunch scallions; medium dice
- 1 vegetable oil; as needed
- Sweat fennel, celery, and asparagus in vegetable oil until nearly translucent.
- Add garlic and bell peppers.
- Sweat until fragrant.
- Cool rapidly in fridge.
- Combine all ingredients together in a large mixing bowl.
- Mix thoroughly.
- Bake at 350 for approximately one hour or until thermometer reaches 155
