Wacky Macky Goulacky
- 1 12 lbs lean ground beef
- 1 medium white onion (or 1/2 large onion)
- 3 jalapeno peppers (de-seeded & finely minced)
- 2 tablespoons granulated garlic
- 1 12 tablespoons onion powder
- 2 teaspoons salt (or more to taste)
- 2 teaspoons pepper (or more to taste)
- 4 tablespoons taco seasoning
- 1 (1 ounce) packet brown gravy mix
- 32 ounces crushed tomatoes
- 16 ounces beef broth
- 1 (16 ounce) bag elbow macaroni
- 0.5 (16 ounce) bag medium pasta shells
- 0.5 (16 ounce) bag small shell pasta
- 1 lb Velveeta cheese
- Mince onion & green chili peppers.
- Cube velveeta cheese log into 1/4 inch size cubes.
- On medium heat, brown ground beef in a very large skillet, adding onion & peppers, cook until vegetables are tender.
- Add spices in order listed mixing in with beef mixture until absorbed and no clumps, (drain off any excess grease first).
- Add crushed tomatoes, & beef broth.
- Stir to combine and bring to a low simmer.
- Reduce heat allowing sauce to thicken slightly.
- In a separate large pot (a tall 12 qt size pot is good), cook pasta until al dente.
- Drain pasta, return to pot.
- Stir in meat sauce and combine until sauce is semi absorbed.
- Stir in velveeta cubes until melted and sauce is creamy.
- Serve.
