Coffee Fruit Cake

  1. Combine fruit, Philly*, sugar, spices, bicarbonate of soda and coffee and water in a saucepan.
  2. Bring to the boil, stirring, then allow to cool.
  3. Add the eggs and mix well.
  4. Sift in the flours, and stir until combined.
  5. Pour into a lined 23cm square pan.
  6. Bake at 180C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
