Coffee Fruit Cake
- 300g sultanas
- 300g raisins
- 100g apricots
- 100g dates
- 250g block PHILADELPHIA Light Cream Cheese, softened
- 1/2 cup brown sugar, lightly packed
- 1 1/2 teaspoon nutmeg
- 1 1/2 teaspoon cinnamon
- 1 teaspoon bicarbonate of soda
- 1 tablespoon instant coffee
- 1 cup water
- 2 eggs
- 1 1/4 cups plain flour
- 1/2 cup self-raising flour
- Combine fruit, Philly*, sugar, spices, bicarbonate of soda and coffee and water in a saucepan.
- Bring to the boil, stirring, then allow to cool.
- Add the eggs and mix well.
- Sift in the flours, and stir until combined.
- Pour into a lined 23cm square pan.
- Bake at 180C for 55-60 minutes or until a skewer inserted in the centre comes out clean.
