Pork Tenderloin With Very Yummy Rice Recipe

  1. Mix sherry, soy sauce, orange juice and ketchup.
  2. Pour over tenderloin and marinade overnight.
  3. Bake 1 hour at 350 degrees.
  4. (Extra marinade can be saved and served hot on side with meal.)
  5. Saute/fry minced onion in butter.
  6. Add in rice and simmer for 5 min, then pour rice into 9 x 13 inch baking dish.
  7. Add in consomme, cheese and mushrooms; mix together.
  8. Bake for 1 hour at 325 degrees.
  9. Arrange pork tenderloin on edges of large serving platter and heap rice in middle.
  10. Sprinkle almonds on top and serve.
