Avacado /Corn Appetizer

  1. Mix olive oil, lemon juice, red vinegar, oregano, salt and pepper to make the dressing.
  2. Let this dressing mixture set for 6 hours or over night in refrigerator.
  3. Mix in the remaining vegetable ingredients with the dressing about two hours before serving.
  4. Serve with tortilla chips.
