Stewed Zucchini
- 2 zucchini; medium thick half moons
- 1 yellow onion; large dice
- 1 yellow bell pepper; large dice
- 1 red bell pepper; large dice
- 1 cup stewed tomatoes with chili pepper
- 1 bunch cilantro; chiffonade
- 4 oz diced green chiles
- 2 clove garlic; minced
- 2 tsp paprika
- 2 tsp cumin
- 1 pinch salt and pepper
- 1 vegetable oil; as needed
- Heat vegetable oil in a large pot.
- Add zucchini, peppers, and onions.
- Season with dried spices.
- Sweat until nearly tender.
- Add garlic.
- Sweat until fragrant.
- Add tomatoes, diced green chiles, and cilantro.
- Stir.
- Sweat a few more minutes until tender.
