Basic Red Gazpacho Recipe

  1. Mince a bit of the tomato, pepper, and cucumber for garnish, and set aside.
  2. Soak bread in a c. of the water for 5 min, then squeeze out excess water.
  3. Place bread in a blender or possibly food processor with the remaining tomato, pepper, cucumber and water, garlic and vinegar; process till smooth, then add in extra virgin olive oil slowly with machine running.
  4. Season to taste with salt and pepper and chill till ready to serve.
  5. Before serving, check seasoning again, and garnish with reserved tomato, pepper, cucumber, and garlic croutons.
