robinmay's stuffed acorn squash
- 1 egg
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp chicken boullion granules
- 2 tbsp boiling water
- 1/4 cup chopped onion
- 2 tbsp butter
- 1 cup stuffing mix (sage stuffing works well)
- 3 small acorn squash halved and seeded
- 3 tbsp brown sugar
- invert squash into a baking pan with about 1/4 inch of water and bake uncovered.
- @ 400 for 30 minutes or until tender
- when cool enough to handle scoop out pulp, leaving a 1/4 inch shell (pulp will measure about 3 cups)
- place shells cut side up in a greased baking pan and.set aside
- in a bowl combine pulp, beaten egg, salt, and pepper
- dissolve bullion in water and add to squash mixture
- in a small sauce pan Saute onions in butter till tender
- stir in stuffing mix to onions
- set aside 1/4 cup stuffing mix for topping and add the rest to squash mix
- spoon the squash and stuffing mix into shells
- top with reserved 1/4 cup stuffing mixture then sprinkle with brown sugar
- bake uncovered @ 400 for 20 minutes or till heated through
- ***u can also cook squash in a casserole dish instead
