Nachos With Guacamole
- 2 ripe avocados, peeled and chopped
- 2 Tbs. fresh lemon juice
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 2 Tbs. chopped cilantro
- 24 large corn tortilla chips
- 34 cup canned vegetarian refried beans
- 6 oz. shredded Jalapeno Jack cheese
- Preheat oven to 450F.
- In medium bowl, combine avocados, lemon juice, garlic and salt; mash with fork.
- Set guacamole aside.
- Spread each chip with thin layer of beans.
- Arrange on baking sheet and sprinkle with cheese.
- Bake until cheese is melted, about 5 minutes.
- Serve with guacamole.
